The existence of grease in combination with high surface temperatures can create flames and thus cause the grease to ignite. The time from initial flash to uncontrollable fireball can be less than 60 seconds. Even with a fire blanket, it can take 20 minutes to extinguish a localised fire.

Fire safety is improved radically by UV-C grease destruction systems and highly efficient KSA filters.
