To ensure a productive and healthy kitchen environment, a high-performance ventilation system aims to

  • remove the excess heat
  • remove odours, particles of grease, and undesirable gases
  • remove moisture
  • renew the air to refresh working environment and to compensate the extracted air
  • prevent the polluted air spreading in dining areas in the most efficient and energy-saving way possible

  • 5 to 10% of an average restaurant's expenses come from energy bills. 
  • Of energy consumption of 100 kWh in a kitchen, 56 kWh goes to heating of replacement air (source: Electricité de France)

    (a restaurant HVAC system's total cost  of ownership of 10 years: initial cost 10%, maintenance 5%, engineering and administration 1%, operating utility costs 84%).

  • A high-efficiency filtration system removes 95% of particles sized 10 microns and above, and it is easy to clean.
  • A high-performance grease destruction system provides savings on maintenance costs for the ductwork and fan.
